{"id":4226,"date":"2017-09-20T16:52:35","date_gmt":"2017-09-20T16:52:35","guid":{"rendered":"http:\/\/www.beer-syndicate.com\/blog\/?p=4226"},"modified":"2018-02-20T21:59:13","modified_gmt":"2018-02-20T21:59:13","slug":"brewing-with-recycled-water-beer-history-made-in-arizona","status":"publish","type":"post","link":"https:\/\/beersyndicate.com\/blog\/brewing-with-recycled-water-beer-history-made-in-arizona\/","title":{"rendered":"Brewing with Recycled Wastewater: Beer History Made in Arizona"},"content":{"rendered":"<p><span style=\"font-size: 10pt;\">I\u2019d never heard the phrase \u201ctoilet to tap\u201d before judging in the \u201cArizona Pure Water Brew Challenge\u201d brewing competition.<\/span><\/p>\n<p><a href=\"http:\/\/www.beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/AZ-Pure-Water-Brew-Challenge.jpg\"><img loading=\"lazy\" class=\"alignnone wp-image-4236 size-large\" title=\"Arizona Pure Water Brew Challenge\" src=\"http:\/\/www.beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/AZ-Pure-Water-Brew-Challenge-1024x378.jpg\" alt=\"Arizona Pure Water Brew Challenge\" width=\"629\" height=\"232\" srcset=\"https:\/\/beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/AZ-Pure-Water-Brew-Challenge-1024x378.jpg 1024w, https:\/\/beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/AZ-Pure-Water-Brew-Challenge-300x111.jpg 300w, https:\/\/beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/AZ-Pure-Water-Brew-Challenge-768x283.jpg 768w, https:\/\/beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/AZ-Pure-Water-Brew-Challenge-900x332.jpg 900w, https:\/\/beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/AZ-Pure-Water-Brew-Challenge.jpg 1160w\" sizes=\"(max-width: 629px) 100vw, 629px\" \/><\/a><\/p>\n<p><span style=\"font-size: 10pt;\">Let me back up.\u00a0 (Ah, toilet humor.)<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">As a certified beer judge, my name and email address are distributed to folks who organize brewing competitions.\u00a0 As of this writing, there are about <span style=\"color: #0000ff;\"><a href=\"https:\/\/www.bjcp.org\/apps\/reports\/countries.php\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">6,599 active BJCP-certified beer judges in the world<\/span><\/a><\/span>, with 5,218 residing in the U.S.\u00a0To put those numbers into prospective, our population size is about on par with that of the critically endangered <a href=\"https:\/\/www.worldwildlife.org\/species\/black-rhino\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">Black Rhino.<\/span><\/a><\/span><\/p>\n<p><span style=\"font-size: 10pt;\">So the call went out to beer judges at the end of July for the <a href=\"http:\/\/www.azpurewaterbrew.org\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">AZ Pure Water Brew Challenge<\/span><\/a> set to take place on Saturday, September 9<span style=\"font-size: 8pt;\"><sup>th<\/sup><\/span> in Tucson, AZ.\u00a0 I\u2019ll be honest with you, I answered &#8220;yes&#8221; before I understood anything about what the competition was about.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">Well, I take that back. I knew it was a brewing competition among professional breweries across the Grand Canyon State, and it seemed to have something to do with \u201cPure Water\u201d.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">And water, as any brewer worth his salt will tell you, is a key component in beer not just because it makes up the majority of the beverage ingredient-wise, but because the particular water composition (minerals, chemicals, pH, etc.) helps to determine the character of the beer, with even minor adjustments becoming noticeable in the final product.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">Naturally, some breweries are keen to tout the purity and source of their water such as Coors beer brewed with \u201c100% Rocky Mountain water\u201d, or the Einst\u00f6k brewery of Iceland that claims to use the \u201cpurest water on Earth\u201d, water that \ufb02ows from rain and prehistoric glaciers down the Hl\u00ed\u00f0arfjall Mountain and through ancient lava \ufb01elds.\u00a0 Gotta admit, that sounds pretty majestic.\u00a0 [<span style=\"color: #0000ff;\"><a href=\"http:\/\/www.ndtv.com\/world-news\/fresh-water-at-puerto-williams-in-chile-worlds-purest-study-1259296\" target=\"_blank\" rel=\"noopener\"><em><span style=\"color: #0000ff;\">Science<\/span><\/em><\/a><\/span> seems to think that the purest water on Earth is found in the southernmost Chilean village of Puerto Williams, but who\u2019s counting.]<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">For clarification, the \u201cPure Water\u201d used in this brewing competition wasn\u2019t exactly the kind of pure water Coors or Einst\u00f6k is talking about.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">No, the kind of water we\u2019re talking about here happens to be <em>wastewater<\/em>, treated wastewater&#8212; hence the somewhat pejorative phrase \u201ctoilet to tap\u201d.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">I neglected to realize this minor detail until about a week before the competition, and if I\u2019m being completely honest, I was a bit apprehensive about the whole thing, increasingly so as the big day drew closer.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">But, I told myself, people have consumed beer brewed with less than enchanting sounding water before and lived to tell the tale.<\/span><\/p>\n<p><span style=\"font-size: 18pt;\"><strong>Duck Pond Beer<\/strong><\/span><\/p>\n<p><span style=\"font-size: 10pt;\">Back in 2011, the documentary <a href=\"http:\/\/www.beersyndicate.com\/blog\/how-beer-saved-the-world-transcript\/\" target=\"_blank\" rel=\"noopener\"><em><span style=\"color: #0000ff;\">How Beer Saved the World <\/span><\/em><\/a>featured a segment in which Dr. Charlie Bamforth, professor of brewing science at the University of California, Davis, theorized that <em>beer<\/em> was responsible for saving millions of lives in Medieval Europe.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">The reasoning goes that much of the water in the Middle Ages was rife with deadly pathogens and drinking it was potentially life-threatening to humans.\u00a0 However, Dr. Bamforth speculated that the fundamental brewing process (which included <em>boiling<\/em> the brew) prevented dangerous microorganisms and bacteria from making people sick.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">To test this hypothesis, Bamforth and his colleagues first collected water from a duck pond.\u00a0 This water was then lab-tested and confirmed to be teeming with fecal coliform bacteria such as E. coli, which likely originated from duck doo-doo.\u00a0 That same water was then used to brew beer and after being lab-tested, the beer was designated safe to drink.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">Finally, the duck poop beer was served to a group of seemingly unsuspecting publicans in a bar. \u00a0The test subjects initially appeared to enjoy the mystery beer, noting descriptors like \u201cperfume-y, nutmeg and salty\u201d.\u00a0 Of course, this positive first impression only stood to compound the drinkers\u2019 sense of shock upon learning of the beer\u2019s <em>fowl<\/em> origins.<\/span><\/p>\n<p><span style=\"font-size: 18pt;\"><strong>\u201cPure Water\u201d<\/strong><\/span><\/p>\n<p><span style=\"font-size: 10pt;\">Unlike the duck pond water in the experiment above, the so-named \u201cPure Water\u201d produced by the <a href=\"http:\/\/www.azpurewaterbrew.org\/team.html\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">Pima County Southwest Water Campus team<\/span><\/a> goes through a much more rigorous purification and strict testing process than simply boiling water.\u00a0 The process includes ultrafiltration, reverse osmosis, UV\/advanced oxidation, granular activated carbon, and chlorine disinfection which remove bacteria, pharmaceuticals, personal care products, heavy metals, viruses, pathogens, etc.<\/span><\/p>\n<p><a href=\"http:\/\/www.beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/Pure-Water-Process.jpg\"><img loading=\"lazy\" class=\"alignnone wp-image-4227 size-large\" title=\"Pure Water: Water 1065w\" sizes=\"(max-width: 629px) 100vw, 629px\" \/><\/a><\/p>\n<p><span style=\"font-size: 10pt;\">In other words, the divisive term \u201ctoilet to tap\u201d doesn\u2019t really come close to accurately describing the level of purification and testing \u201cPure Water\u201d undergoes, although I would have never heard of the term if it wasn\u2019t listed on the<span style=\"color: #0000ff;\"> <a href=\"http:\/\/www.azpurewaterbrew.org\/faqs.html\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">FAQ section<\/span><\/a> <\/span>of the brewing competition website.\u00a0But better to face these potential objections head on in a campaign to garner public buy-in.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">\u201cOur biggest challenge will not be technological; our biggest challenge will be public perception and dealing with the obvious \u2018yuck\u2019 factor,\u201d notes Jeff Prevatt, Pima County Wastewater Reclamation Department Research and Innovation Manager.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">And what better way to get the general public on board than with beer. \u00a0Heck, it seems that the public will stomach just about anything in the name of beer.\u00a0 Consider commercially produced brewskis that included such eclectic ingredients as <span style=\"color: #0000ff;\"><a href=\"http:\/\/www.wynkoop.com\/brewery\/brew-blog\/rocky-mountain-oyster-stout\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">bull testicles<\/span><\/a><span style=\"color: #000000;\">, <a href=\"https:\/\/en.wikipedia.org\/wiki\/Rogue_Beard_Beer\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">beard yeast<\/span><\/a>,<span style=\"color: #0000ff;\">\u00a0<a href=\"http:\/\/www.huffingtonpost.co.uk\/entry\/vaginal-beer-the-order-of-yoni-crowdfunding_uk_56fcde77e4b0884065f045f3\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">vaginal bacteria<\/span><\/a><span style=\"color: #000000;\">,<\/span><\/span><\/span><\/span><span style=\"color: #000000;\">\u00a0<a href=\"http:\/\/www.foodandwine.com\/fwx\/drink\/michigan-brewery-now-making-beer-made-civet-poop\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">cat feces<\/span><\/a>, \u00a0and yes even as late as the beginning of 2017, Stone Brewing Co. produced \u201cFull Circle Pale Ale\u201d, a beer brewed with <a href=\"http:\/\/www.stonebrewing.com\/blog\/beer\/2017\/stone-brewing-and-pure-water-san-diego-go-full-circle#ageGatePassed\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">reclaimed water<\/span><span style=\"color: #000000;\">.<\/span><\/a><\/span><\/span><\/p>\n<p><span style=\"font-size: 10pt;\">Brewing with recycled water can get you a nice media buzz, but in Arizona\u2019s case, the state is slowly sobering to the reality that mandatory water cutbacks may be coming if water levels continue to decline to critically low levels in drought-stricken Lake Mead, a significant source of water for Arizona, California and Nevada.\u00a0 Add to that <span style=\"color: #0000ff;\"><a href=\"https:\/\/www.newsdeeply.com\/water\/articles\/2017\/05\/18\/reckoning-ahead-for-arizona-as-water-imbalance-grows-on-colorado-river\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">Arizona\u2019s relatively low-priory water rights<\/span><\/a><\/span> in this case, and let\u2019s just say it\u2019s nice to have an option on deck with \u201cPure Water\u201d.\u00a0 [Fun fact: Parts of Australia, Singapore, New Mexico, Virginia, Texas, Georgia, Orange County, San Diego, and many other California cities have already implemented water recycling projects in recent years.\u00a0 <span style=\"color: #0000ff;\"><a href=\"https:\/\/www.pri.org\/stories\/2016-12-15\/recycling-sewage-drinking-water-no-big-deal-theyve-been-doing-it-namibia-50-years\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">Namibia has been doing it for nearly 50 years.<\/span><\/a><\/span>]<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">To be sure, the AZ Pure Water Brew Challenge was historical in that it was the first time a statewide competition was held that utilized treated sewage water in the beer, especially at a time when water usage concerns are on the rise. \u00a0And unlike <a href=\"http:\/\/www.stonebrewing.com\/blog\/beer\/2017\/stone-brewing-and-pure-water-san-diego-go-full-circle\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">Stone&#8217;s reclaimed water beer<\/span><\/a> that was brewed specifically for the <a href=\"https:\/\/www.facebook.com\/PureWaterSD\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">PureWaterSD<\/span><\/a> private one-time event and available only to politicians and VIPs, many of the AZ Pure Water Brew Challenge beers were made available to the general public and have already begun showing<\/span><span style=\"font-size: 10pt;\"> up on the beer check-in app\u00a0<a href=\"https:\/\/untappd.com\/b\/arizona-wilderness-brewing-co-az-pure-water-dipa\/2271555\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">Untappd<\/span><span style=\"color: #000000;\">.<\/span><\/a><\/span><\/p>\n<p><span style=\"font-size: 10pt;\">But while the brewing competition drew eyeballs, one of the most astonishing parts of this story is that the whole water purification process takes place inside a mobile lab that was converted from a shipping container that opens up like Optimus Prime.<\/span><\/p>\n<p><img loading=\"lazy\" class=\"alignnone wp-image-4241\" src=\"http:\/\/www.beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/Water-Purification-Truck-1024x609.jpg\" alt=\"\" width=\"542\" height=\"326\" \/><\/p>\n<p><span style=\"font-size: 10pt;\">And it was this novel concept of arranging a statewide brewing competition using recycled water produced in a mobile shipping container that won the\u00a0Southwest Pima Country Water Campus the <span style=\"color: #0000ff;\"><span style=\"color: #0000ff;\"><a href=\"http:\/\/webcms.pima.gov\/cms\/One.aspx?portalId=169&amp;pageId=311478\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">$250,000 Water Innovation grand prize<\/span><\/a><span style=\"color: #000000;\">, which helped make an idea reality<\/span><\/span><span style=\"color: #000000;\">.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-size: 10pt;\">I know what you\u2019re thinking: all of this is cool and everything, but what was the beer like.<\/span><\/p>\n<p><span style=\"font-size: 18pt;\"><strong>The Judge\u2019s Table<\/strong><\/span><\/p>\n<p><span style=\"font-size: 10pt;\">As a competition brewer and certified beer judge, I\u2019ve been on both sides of the judging table.\u00a0 I know that anxious feeling of waiting to hear the competition results of a beer I\u2019ve put heaps of effort and thoughtfulness into.\u00a0 And secretly, I think every brewer wants to know what conversations were had about their beer at the judge\u2019s table, especially if they made it to the Best-of-Show (BOS) final round.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">Pull up a chair.<\/span><\/p>\n<p><a href=\"http:\/\/www.beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/Judging-BOS.jpg\"><img loading=\"lazy\" class=\"alignnone wp-image-4228 size-full\" title=\"Daniel J. BOS, judges paired off and were assigned a few beers to judge, with each set of judges selecting only the best of the round to move forward to BOS. \u00a0As fate would have it, I judged round one with my BJCP Certified beer judge sister who had just arrived in Tucson after narrowly evacuating her home in the Caribbean ahead of the approaching catastrophic Category 5 Hurricane Irma.\u00a0 The beer gods work in mysterious ways, I suppose.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">Of the 26 Arizona breweries competing in the competition, seven anonymous entries made it into the Best-of-Show end-game.<\/span><\/p>\n<p><a href=\"http:\/\/www.beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/BOS.jpg\"><img loading=\"lazy\" class=\"alignnone wp-image-4229 size-large\" title=\"Sorting Beers in Beer Competition\" src=\"http:\/\/www.beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/BOS-1024x406.jpg\" alt=\"Sorting Beers in Beer Competition\" width=\"629\" height=\"249\" srcset=\"https:\/\/beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/BOS-1024x406.jpg 1024w, https:\/\/beersyndicate.com\/blog\/wp-content\/uploads\/2017\/09\/BOS-300x119.jpg 100vw, 629px\" \/><\/a><\/p>\n<p><span style=\"font-size: 10pt;\">So just how were the finalists in the AZ Pure Water Brew Challenge?\u00a0 The truth is, they were excellent and included a welcome variety of beer styles such as Czech Pilsner, DIPA, IPA, American Pale Ale, K\u00f6lsch, Scottish Export and a sour brown ale.\u00a0 In these kinds of competitions, the winners aren\u2019t determined by whichever beer style the judge has a personal preference for at home, but rather which beer most accurately represents the beer style it claims to be according to the <a href=\"https:\/\/www.bjcp.org\/docs\/2015_Guidelines_Beer.pdf\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">BJCP Beer Style Guidelines<span style=\"color: #000000;\">.<\/span><\/span><\/a><\/span><\/p>\n<p><span style=\"font-size: 10pt;\">It was quickly apparent that the winning beer, a <a href=\"http:\/\/www.dragoonbrewing.com\/clear-water-pils-1\/\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">Czech-style Pilsner<\/span><span style=\"color: #000000;\">,<\/span><\/a> was stylistically on target&#8212; dangerously so&#8212; a feat that is typically more difficult to accomplish with such technical lighter beers.\u00a0 Not to mention, the Pilsner wasn\u2019t over-hopped, which is perhaps the single most common mistake American brewers make with lighter beers, if not most other beer styles.\u00a0 When <a href=\"http:\/\/www.tucsonnewsnow.com\/story\/36341731\/dragoon-brewing-company-wins-az-pure-water-brew-challenge\" target=\"_blank\" rel=\"noopener\"><span style=\"color: #0000ff;\">Dragoon Brewing Co.<\/span><\/a> was announced to be the brewery behind the winning Pilsner, I immediately thought back to the Cicerone and BJCP Beer Judge certificates that hung in the office of Dragoon\u2019s head brewer Eric Greene.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">The Double IPA brewed by one of Phoenix\u2019s most beloved breweries, Arizona Wilderness Brewing Co., was a close second.\u00a0 From a strategic point of view, entering a big hoppy DIPA into a brewing competition is a smart move because the style is largely a crowd-pleaser.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">And Wilderness would have likely won the competition if Dragoon hadn\u2019t taken the bold, perhaps <em>unnecessary<\/em>, risk of going all in on such an unforgiving style as Czech Pilsner and gotten closer to the stylistic bull\u2019s-eye.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\">But sometimes, fortune favors the bold.\u00a0 Fortune, and treated wastewater.<\/span><\/p>\n<p><span style=\"font-size: 18pt;\"><strong>Be Part of Beer History<\/strong><\/span><\/p>\n<p><span style=\"font-size: 10pt;\">For a limited time, you can take part in brewing history and sample some of the
